Week in Review

Some highlights of our week. Doug took Wednesday off to go snowshoeing with Colten's class. They both had fun away from the regular day. Colten walked a little funny that night but recovered quickly. We had a combined concert with the high school and junior high. Gave us a little glimpse of what next year will be like. Lots of fun. Doug took the 3 younger ones out Geo-caching. They were very successful and found all that they were looking for. Colten is also in Basketball. He practices every day after school that they don't have a game. They have 2 of them a week. Luckily the season is short. His team gave him a nickname of Shack! He loves it.
The food picture is my "crack". Tomorrow is Super Bowl Sunday. I don't even know who is playing. I just know it isn't my Bronco's. I know, they are college but I can dream can't I? I love this dip. Every time I want to make it I have a hard time finding the recipe. Today it came to me "put it on your blog and then you will always know where to find it" So if it looks gross then that means more for me. Here is the recipe just in case you might want to try it. I got it from my sister, Lisa.
5-6 diced avocados
Cilantro
Lime juice
Shoe peg corn (1 can)
Diced tomato (1 can)
Black eyed peas (1 can)
Italian seasoning mix (2 pkgs)
1/4 cup olive oil
1/4 cup red wine vinegar
Serve with Frito's scoops chips.

  1. Finally - a new post! I was having withdrawals since you've gone to work and you and Doug were gone yesterday when I called. How am I supposed to enjoy my family?
    Thanks for the recipe - I ate this last year at a BBQ at some friends and they called it "Cowboy Salsa" although I don't know why because cowboys aren't typically known for eating olive oil and Italian dressing!! Duh! It is yummy, though. I may add it to today's menu of deviled eggs, 7 layer bean dip, little smokies, and stuffed mushrooms...are you ready for some football (and heartburn??!!) Love you all. (P.S. Cute kids - the big one on snowshoes, too! XOXO)
